Just got this working! The trick was configuring the MQTT broker properly. Should have asked sooner.
SystemAdmin: This might be a silly question, but does it work with WiFi? I'm trying to remote access and unsure about the setup.

Honestly, I'd recommend Home Assistant over Smartthings for flexibility. Keep in mind the tradeoff.
